Today I took advantage of corn being
on sale at Publix to make
this summery dish. I used okra I had chopped and frozen from the last of the farmers market in November, chicken sausage from my freezer, and as a cost-saver, swapped canned organic diced tomatoes (recently on a "buy theirs, get ours" at Publix) for fresh. DELISH, colorful, and cheap. REALLY REALLY good side item (with just about anything): Trader Joe's Harvest Grains blend.
Bonus: Joy, who has recently been on a food strike, finally ate a lot of dinner.
Added ambience: a
Pandora mix that we were all digging, ending in a massive family dance party in the kitchen.
